Maple Wine Poached Pears with Whipped Mascarpone & Maple Granola 🍁
While it’s a few components to prepare, all of them are very versatile and can be used in several different ways!
For example, the wine-poached pears can be used to eat with ice cream or even oatmeal (if you want to start your morning with a bang 💥).
The granola can be used to eat as is, or with milk as cereal in the morning!
The whipped mascarpone makes a GREAT fresh fruit dip or on crackers with jam.
So to break it down, here’s how to prepare the recipe:
For the poached pears —
• 2 cups Magnetic HIll Winery Maple Swish Dessert Wine
• 1/2 - 1 cup water (less water for a stronger wine taste)
• 1/2 cup maple syrup
• 1/4 tsp. ground cinnamon
• 1/4 tsp. ground ginger
• 1/8 tsp. ground nutmeg
• Pinch of ground cloves
• 4 pears, peeled + cut in half lengthwise + deseeded
Instructions:
1. Add all the above in a medium size pot. Bring to a boil, then reduce to a simmer. Simmer for 30 minutes, rotating the pears every 5 minutes to make sure they all come in contact with the liquid. Remove from heat once pears have softened and can be cut through easily with a fork.
For the whipped mascarpone —
• 1 cup heavy cream
• 1/4 cup powdered sugar, sifted
• 1 cup mascarpone
• 1/2 tsp. vanilla bean paste
Instructions:
1. Whip heavy cream + powdered sugar together until stiff peaks.
2. In another bowl, whip together mascarpone and vanilla.
3. With a spatula, gently fold in the whipped cream into the mascarpone.
For the pecan maple granola —
• 2 cups rolled oats
• 1 cup chopped pecans
• 1 tsp. cinnamon powder
• 1/2 cup maple syrup
• 1/4 cup coconut oil
• 1/2 tsp. vanilla bean paste
• Large pinch of salt
Instructions:
1. Mix all in a bowl.
2. Lay on a baking sheet w. parchment paper and bake at 350F for 10-15 min.
To assemble:
1. Lay a spoonful of whipped mascarpone on a plate.
2. Place 2 pieces of poached pears on top w. some poaching liquid.
3. Top with granola, a drizzle of maple syrup, and a pinch of flaky sea salt.
