New Brunswick’s Winter Grazing Board

A New Brunswick-inspired winter grazing board: a step-by-step guide.

If there’s one thing that I love more than cooking, is sitting in front of the TV with a good rom-com movie, non-alcoholic wine from Benjamin Bridge winery, and a grazing board all to myself (or to share with friends). 🤍

Since winter here in New Brunswick is typically cold and with little to no vegetation growing, it’s the perfect time for cozying up with food that brings comfort and warmth.

My go-to formula for the perfect winter grazing platter consists of:

1. Finding the perfect canvas for the grazing board. This board here was made for 14-16 guests (or one very, very determined individual).

2. Start with your jams & jellies! I choose 3 but 2 is usually plenty. I alternate between sweet and savory, and also use what makes sense for the season! Caramelized onion for *umami* flavor, fig jam because *in season*, and cherry merlot jelly for warmth!

3. Add in your crackers. I found the most amazing blue cheese fig shortbread at Liquid Gold Moncton this past week and HAD to buy them. It was as good as it sounds! I try to alternative between crackers with a crunch and softer textures.

4. Add in your fresh fruits. I used black grapes & fresh figs since both are in season right now. Apples or pears also would be a great addition to a winter grazing board featuring New Brunswick’s local produce.

5. Add in crunch, sweetness, and saltiness with dried nuts and fruits. I had Medjool dates and tamari almonds.

6. Add in your cheese! 2-3 types of cheeses are great, and I alternate between soft and hard cheese, with both mild and strong flavors. I went with a cumin gouda from Armadale Farms. I also LOVE the goat cheese selection from Fromagerie au Fond des Bois (Rexton, NB) so this is usually my go-to.

7. Add in your cured meats! We had a cured rum saucisson and duck pistachio pâté, both from Ferme du Diamant (St-André-LeBlanc, NB).

8. Last but not least, this is optional but a great seasonal add-on: fresh honeycomb! It’s a small touch of luxury that goes a long way!

Best enjoyed by the fire, with a glass of wine or sparkling juice in hand, and no set plans. 🍷
